The Peached Tortilla is a mobile food truck which launched in Austin, Texas in late September 2010. Currently, we operate two food trucks and a full-service catering business. In the near future, our goal is to invite you within our set of four walls at our brick & mortar location. Eric Silverstein, Founder
The Peached Tortilla was founded by Eric Silverstein, a former litigator who decided to pursue a different career path and marry his passions of food and business. Eric was born in Tokyo, Japan, where he was heavily influenced by Japanese, Chinese and Malaysian cuisine. At the age of ten, Eric moved to Atlanta, Georgia, where he was introduced to traditional Southern cuisine. These divergent flavors and cuisines serve as the backdrop for The Peached Tortilla’s menu. In 2012, Restaurant Hospitality recognized Eric as one of the new “Stars of Street Food.” He is featured on the Chefsfeed Application for Austin, TX and was recently named one of the top 30 Up and Coming Chefs in America by Plate Magazine.

Hope Furst, Dir. of Business Development
Hope joined The Peached Tortilla in January 2013 to head the company’s continued growth in catering and events. Formerly a client specialist with Labatt Food Service, Hope brings years of industry knowledge and product familiarity to the team. Hope works closely with The Peached Tortilla’s catering clients and local vendors to coordinate menu planning, set-up and service at events. Most recently, Hope was named one of Zagat’s 30 Under 30 in Austin.

Tess Wallerstedt, Catering Bookings & Operations
As our resident wedding and event guru, Tess joined The Peached Tortilla team with a wealth of knowledge & experience in wedding & event planning. Hailing from One World Theatre, one of Austin’s premiere luxury wedding & event venues, Tess has been able to combine her love for details and passion for delicious food – making The Peached Tortilla a perfect fit. Tess strives to ensure every client receives top tier service, while providing an experience to remember for you and your guests. When she’s not creating seamless celebrations, Tess can be found enjoying the sun at Town Lake with her rescued pit bull, Drew.

Michelle Gonzales, Kitchen Manager
Michelle joined The Peached Tortilla in December 2012 and is a graduate of the Culinary Arts program at the Art Institute. She comes from years of restaurant experience, including a recent stint at a reputable national hotel chain. Her passion and work ethic continue to drive the kitchen at The Peached Tortilla. Michelle enjoys comedic Memes and her Dallas Cowboys when she’s not being a kitchen boss.
Gilberto Solis, General Manager
Gilberto joined The Peached Tortilla family in April 2013 and is a graduate of Le Cordon Bleu in Austin, Texas. He comes from years within the restaurant industry, working at restaurants as a kid in his hometown of Juarez, Mexico. You have likely seen him greet you at one of our trucks, where he first got his start at the company. On his off time, he enjoys fishing and the outdoors with his coworkers and friends.
Kristine Waggoner, Head of Digital Media
Kristine is The Peached Tortilla’s web designer and digital content manager. She has a passion for smart design, artistic photography, and good food! She designed and developed this website and continues to maintain it with up-to-date information. She is also the girl behind the camera taking pictures of all things Peached and sharing them via our social media feeds.
